Description
Birch is one of the oldest trees in Northern Europe, and is also widespread in Western Asia. It is a majestic, slender, early-budding tree. Its twigs already played an important role in mythology, as they were believed to awaken love. In Celtic cultures, birch symbolizes growth, renewal, stability, dedication and adaptability, as it is highly adaptable and is able to grow even in adverse environmental conditions. Proof of its adaptability is its rapid ability to repopulate areas damaged by forest fires or clearings. Among Nordic peoples, birch buds are a symbol of the renewal of life force, in Russia it is considered the basis of health and is widely used as a traditional elixir of life rich in minerals. For supporting purposes, in addition to the leaves and buds, which contain flavonoids, triterpenes and phenolcarboxylic acids, catkins are also used as a source of nutritionally high-value pollen.
The characteristic ingredients of catkins, in addition to those already mentioned, are proteins, carotenes (vitamin A is produced in the body from beta-carotene) and trace elements potassium, calcium, magnesium and manganese. Of the vitamins, the content of ascorbic acid is significant. In some countries, catkins are used for consumption either raw or added to soups or stews and are also used to prepare tea. Birch supports the activity of the liver, kidneys and intestinal tract, strengthens detoxification processes in the body. It facilitates digestion, helps maintain normal cholesterol levels.
