Description
The birch is one of the oldest trees in northern Europe and is also widespread in western Asia. It is a tall, slender, early budding tree. Already in mythology, its branches played an important role as they were believed to awaken love. In Celtic cultures, the birch tree symbolizes growth, renewal, stability, initiation and adaptability, as it is highly adaptable and able to grow even in adverse environmental conditions. Evidence of its adaptability is its rapid ability to repopulate areas damaged by forest fires or clearings. Among the Nordic peoples, birch buds are a symbol of renewed vitality, in Russia it is considered the basis of health and is widely used as a traditional mineral-rich elixir of life. In addition to the leaf and bud, which contain flavonoids, triterpenes and phenolic carboxylic acids, the berries are also used for supportive purposes as a source of highly nutritious pollen.
In addition to those already mentioned, the characteristic contents of lambsquarters are protein, carotenes (vitamin A is formed in the body from beta-carotene) and the trace elements potassium, calcium, magnesium and manganese. Of the vitamins, the ascorbic acid content is significant. In some countries, lambs are eaten raw or added to soups or stews and also used to make tea. Birch supports the liver, kidneys and intestinal tract, strengthening detoxification processes in the body. It facilitates digestion, helps maintain normal cholesterol levels.
